Ramadan Dessert, From our Table to Yours
April 21, 2022This week, we’re craving something sweet, so we asked Karam’s Innovative Education mentor Hiba, to share her Tamrieh recipe. Legend has it that this dessert was first made in the city of Nablus, more than two hundred years ago, when a young man arrived from the city of Tamra and made it from dough and semolina. That is why the people named this dessert Tamrieh, after his city.
Here’s the recipe to a mouth-watering Ramadan treat:
Ingredients:
- 250 grams of date paste
- ¼ cup of butter
- One box of tea biscuits
- 2 tsp ground cardamom
- 2 tsp cinnamon powder
- 4 tbsp milk powder
- 1 cup of warm water
Flavors as desired:
- 2 tbsp cinnamon powder
- 2 tbsp crushed pistachios
- 2 tbsp coconut powder
- 2 tbsp roasted sesame
- Dry roses
- Crushed hazelnut
Directions:
- Add the date paste into a big bowl, then crush the tea biscuits in a food processor until they form a light powder. Add them to the bowl.
- In a large saucepan, stir the milk powder on medium heat until it becomes golden brown, then add the butter and cook a little, then add the crushed tea biscuits. Stir the mixture together until its roasted
- When the mixture is ready, we add the date paste little by little to the saucepan, then we add the 2 tablespoons of ground cardamom and a little bit of cinnamon. A little water is added with each batch of dough.
- Note: date paste is added in several batches to ensure that all ingredients are mixed well with each other. The new batch is added after making sure that the old batch has become like putty.
- When all the batches of the dough are finished and they have been stirred well and mixed with the ingredients, we take the mixture to a cold plate and we kneaded together (please be careful, the mixture is very hot and it is preferable to wear gloves), then we start by taking small pieces weighing 25-30 g and we dip them in one of the flavors (roasted sesame – pistachio – coconut …)
